Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as cheeses, vegetables or pasta. The word frittata is Italian and roughly translates to "fried". Wikipedia
It takes about 5mins to prepare and 15mins to cook.
- Finely dice the chilli and garlic
- Cut the spring onions into 1cm lengths
- Wash and slice the leek/carrot
- Heat some olive oil or butter in a large heavy-based ovenproof frying pan, add the chilli and garlic and stir gently for 2 mins
- Add the vegetables to the pan and fry gently until slightly soft (about 5 minutes)
- Stir occassionally
- While this is cooking gently beat the 12 eggs in a bowl (use less if a small pan), add pepper to taste
- Preheat the grill
- Pour the eggs over the vegetable mixture and gently stir
- Heat gently until the egg begins to cook at the edges
- Place under the grill for 8–10 minutes until the egg is set
- Garnish with parsley, cut into wedges and serve
Variations can include:
- adding grated cheese after 5 mins under the grill
- adding a couple of teaspoons of milk or cream to the eggs
